The key to cupcakes

I’m always on the look out for a good cupcake recipe. I found this one for graham cracker cupcakes with  key lime cream cheese frosting this week. The photo in the blog looked like a hand held version of  pie and I just love eating mini-morsels of everything. I knew it… I was in for kitchen experiment #5 this weekend. The verdict: O.M.G.

Several years ago I wrote off the likes of anything containing key lime, specifically pie. I don’t know what I was thinking… it just didn’t sound like something appealing to me until a few months ago when Dave picked up some key lime pie along with our to go order at California Pizza Kitchen. He did this while I was at home so I couldn’t persuade him to get something chocolate-infused.

I didn’t have the heart to tell him that I don’t like key lime without knowing its taste. So I gave it a try and MMMMmmmMMMmm! It was sweet with a punch of tart.

These cupcakes are better than that, times infinity, seriously. The key limes I found at my local Mexican market for .59 cents a pound. Not bad at all! I chose a variety of sizes. The big ones are easier to squeeze for the two tablespoons needed for the frosting and the smaller limes are good for the slices on top of the cupcakes.
