Somewhere Over The Rainbow

It took just one look at these cupcakes to bring back memories of singing along to Rainbow Brite while twirling around my living room clutching imaginary moon beams in my hands. Break one of these cupcakes open and it’s instant happiness. Don’t even resist smiling, it’s impossible!

I was looking for an easy¬† yet fun baking experiment with my cousin when I came across this recipe.¬† It’s easy to whip up the cake batter, but it took us awhile to fill the cupcake liners. There were so many color combinations and patterns we wanted to try. It was so fun but a little time consuming.

For an extra kick of color head over to your local bake shop and pick up some funky cupcake liners. The one in my town has a whole aisle dedicated to them!

I had a difficult time finding color gels at the grocery store. You’ll have to go to a specialty bake store to get the right kind.

To minimize the mess and cut down on washing dishes, I used plastic cups and utensils to mix the batter and color gel. There’s no muss or fuss when it comes to cleaning up.

Using a simple white cake recipe and cake flour these cupcakes are just as delicious as they are beautiful. Happy baking!

    Hi Jessica, Look for the Americolor baking dyes. The red is a very rich color that makes that pretty coral. Hope that helps!
