Certain foods remind me of growing up. Tuna casserole was one of those dishes that seemed not that quite exciting, but now I can appreciate the value in this quick fix. My mom who works full-time as a nurse, would come home after a long day at the clinic and have to figure out what to feed my brother and me. The other day I was browsing Pinterest when I came across the long-forgotten tuna casserole and out of nostalgia, I decided I would whip it up for a taste of home.
It’s so simple and low maintenance. The boyfriend who was making fun of me for making a casserole changed his tune after the first bite. It’s the first time he’s ever asked to take leftovers to work. Recipe adapted from here.
